Buddhism, the main religion in Thailand, is at a central core to everyday life. Buddha images and temples are highly regarded. Please enter a temple with respect and wear appropriate clothes (no shorts and ladies to keep their shoulders covered).
Refrain from pointing your feet to someone while sitting and don't touch people's head. On Koh Samui the inhabitants are normally used to 'western lifestyles', so there are no problems as long as you just show the same respect as people show you.
Try using some of the language, you'll be surprised how well they receive it and offer to help you out.
Brief history of Samui
The first people to settle on Koh Samui were fishermen some 1500 years ago. Chinese Ming dynasty maps chart Koh Samui around 500 years ago. The main industries on the island are tourism, fishing and coconuts. Some tourists started to come here in early 70s, when the only businesses here were coconuts and fishing. Since then the island has become a self proclaimed boutique destination.
